Goats Cheese and Fig Salad Recipe

We have had an abundance of figs this year - so I’ve been finding inventive ways to get them into my diet. One of my favourite recipes of the moment is my goats cheese and fig salad. It take just a few minutes to throw together and is packed with loads of vitamins and minerals.

What you need:

  • Lambs tongue lettuce or rocket - High in iron and antioxidants

  • Fresh figs - High in fibre and potassium

  • Spanish ham or parma ham - For a protein burst

  • Semi-soft goats cheese - full of calcium and easier to digest than cows cheese.

  • Pine nuts - keep you feeling sated and are a good source of magnesium

  • Balsamic glaze - You only need a small drizzle, it’s oh so tasty but full of naughty sugars.

  • Cracked black pepper - has been shown to stimulate digestion

Method:

Assemble all the above ingredients in a shallow bowl, and voila! You have yourself a very tasty salad!
